Parboiled is a way of processing rice benefited from the name it carries “partially boiled”. Thanks to the presence of starch, “parboiled” rice grains absorb less fat, contain mineral salts and vitamin B. They have the property that during cooking, the grains of this rice stay separate and do not stick together, making it ideal for a delicious pilaf.
